The national traditions behind Caucasian cuisine are one of its most appealing features. Russian Travel Guide host Olga Degtyareva set out to discover just how the Azerbaijani stew Sadj is made and what makes it such a culinary specialty. The stew itself is served in a rather unusual way — with the dish resting over coals. This way the stew can retain its high temperature during the entirety of a Caucasian meal, which is not known to be brief in nature.
